Our Historical Recipes
On August 24, 1837, cook Collinet, cook at the Pavillon Henri IV, accidentally invented the recipe for souffléed apples during the inauguration of the Paris/Saint-Germain-en-Laye railway line, later he reissued a second gastronomic event by perfecting the Béarnaise sauce recipe.
